Ingredients
800 gr cheddar cheese
4 slices white ham (ham on the bone, for example)
4 thick slices farmhouse bread
4 teaspoons whole-grain mustard
25 cl amber or dark beer
Salt and freshly ground pepper
Preparation:
1- Preheat oven to 180 degrees.
Toast the bread slices with a toaster or under the broiler. Spread with mustard and arrange in the bottom of 4 small individual gratin dishes.
Add a slice of ham to each slice of bread.
2- Heat the beer in a saucepan over low heat. Add the diced cheddar cheese. Season with pepper and a little salt, as the cheese is already very salty.
Melt the cheese gradually, stirring regularly with a wooden spoon. The texture should be smooth and homogeneous.
Generously coat the ham with the cheddar and beer sauce.
Place in the oven for 10 to 15 minutes, until the cheese has browned on top.
3- Serve hot in the gratin dishes, with a portion of home fries and a salad of baby greens.
Variations:
For those with a sweet tooth, you can add a fried egg to the welsh when it comes out of the oven. The result is a complete welsh!
