The Art of Refining

Refining means putting the cheese in optimal conditions and allowing it to to develop all its richness, to be the best cheese in its family family... in the eyes of the taster.

So there is no such thing as ONE ripening process, but MANY... simply because every affineur has his or her own personality. As a result, the flavors and textures of the same cheese are transformed by the care taken by the ripener.

While know-how is a universal method, the qualities of the refiner the difference:
